Chicken Fajita Recipe

My mother and I have made chicken fajitas every Christmas Eve since I was seven or eight years old. When I was little, my mother and I used to make fajitas using a seasoning you could buy at the store, but as I got older and more adventurous with cooking, I suggested we make fajitas using our own seasoning.

This recipe is one which we came up with together. Though it’s not strictly “Mexican” food, I consider it a family recipe since my mom and I came up with it and it conjures up a lot of memories of us in the kitchen together. 

Of course, like many home chefs would agree, seasoning properly is all a matter of taste. The quantities I’ve used in this recipe are what I use when I cook, but the way to ensure you have fajitas which are just perfect for you is to let your tastebuds tell you the right proportion of ingredients.

Makes 5 servings

Ingredients

  • 1.25 lb chicken breast (chicken breasts or cutlets)

  • 1 red onion

  • 2 large bell peppers

  • Salt

  • Black pepper

  • Vegetable oil

  • ¼ tsp paprika

  • ¼ tsp onion powder

  • ¼ tsp garlic powder

  • ¼ tsp cumin

  • ¼ tsp ground cayenne pepper

  • Crushed red pepper, to taste (I used ½ tsp)

  • Flour tortillas

Directions

  1. Cut bell peppers and red onions into strips.

  2. Heat vegetable oil in a large frying pan on medium-high heat.

  3. Salt and pepper the chicken generously and fry until cooked and slightly browned.

  4. In another frying pan, heat vegetable oil on medium heat. Fry your onion for one minute before adding the bell peppers. Make sure to stir frequently so your vegetables do not burn.

  5. While your vegetables are cooking, cut your chicken into strips roughly the same size as your vegetable strips.

  6. In a small bowl, combine your paprika, onion powder, garlic powder, cumin, cayenne pepper, and crushed red pepper (if using), along with an additional ¼ tsp of salt. 

  7. Once your vegetables are cooked (they should be tender and may be slightly browned), combine your vegetables and chicken in a large bowl.

  8. Sprinkle your seasoning mix with the vegetables and chicken and mix thoroughly. 

  9. Serve your fajitas with warm flour tortillas or rice and enjoy!
